Latvian meatball soup
The recipe for this simple soup has been cooking some of my old records. I immediately thought about my Baltic roots and decided to cook! Turned out very decent replacement for the soup.

Ingredients

  • Minced meat

    300 g

  • Beets

    500 g

  • Onion

    2 piece

  • Carrots

    1 piece

  • Chicken egg

    1 piece

  • Water

    2 l

  • Greens

    1 coup

  • Garlic

    3 tooth

  • Tomato paste

    1 Tbsp

  • Vinegar

    1 Tbsp

  • Black pepper

  • Bay leaf

    2 piece

  • Salt

In a bowl put the minced meat. Break egg and grate 1 onion.

From parsley and dill cut off the legs (not throw!), leaves finely chop and add to stuffing. Salt, pepper to taste and mix everything.

From the received mass roll meatballs into small balls.

Put to boil in a saucepan water. As soon as the water boils, throw in a few peppercorns, a Bay leaf and throw one by one the meatballs. The resulting foam gently remove with a slotted spoon. Leave to cook on medium heat without a lid.

Meanwhile, grate the carrot, finely chop the second onion and chop twigs, the rest of the greens. All this fry in a skillet with vegetable oil.

Received pour zazharku in the pan for meatballs.

Boiled beets RUB on a coarse grater and also pour into the pan.

Add tomato paste and grated on a fine grater garlic. Sprinkle with salt, make a small fire and leave to cook under a lid for 20 minutes.

After this time switch off the stove and add a soup spoon of vinegar (for soup not lost color). When serving, sprinkle with greens and add sour cream (if you like). Personally I do not like sour cream more.
