One way or another, but the cake has a dome shape, and its composition necessarily includes an Italian meringue, both inside and outside. But... the modern version of this cake has undergone many changes, I want to introduce you to this. The cake baked for the kids, so he decorated accordingly. Chocolate mousse: Soak gelatin 8 g in cold water. Cream 500 g whipped with sugar until stable peaks. Defer to 120 g in a separate container.
Melt the chocolate 280 g on a steam bath, add to it and pressed the swollen gelatin, stir well and combine with whipped cream 380 g, it is possible to spin a couple of times with a mixer.
Assembly: To assemble this cake you need a special form for zuccotto, I don't have it, and I used a bowl height of 17 cm and 24 cm in diameter, which cinched inside with cling film.
Impregnation: Dilute the syrup with 70 ml of boiled water.
