Sorbetto of rose petals (Sorbetto ai petali di rosa)
Sorbet is a soft, tart frozen dessert made of sugar syrup and fruit juice, sometimes liquor, Calvados or champagne. Serve it in tall glasses or sundae dish. Sometimes sorbet not freeze completely and serve as a drink. In this case, it is often served between courses, as sorbets improves digestion. In this recipe, you cannot use the purchase of roses from the market, only their own, natural, with a vegetable garden! Best of all the petals gather in the early morning, with the expanded rose, selecting the most fragrant and fresh. Recipe from the book Valentino Bontempi.

Ingredients

    650 g

  • Apple

    1 piece

  • Lemon

    1 piece

  • Sugar

    300 g

  • Vanilla

    0.5 piece

  • Water

    500 ml

That's all we need for the sorbet: rose petals, lemon, vanilla pod, Apple, sugar and water.

Rose petals a quick rinse in cold tap water.

Grate the lemon peel on a grater, squeeze the juice of a lemon.

Apple peel, cut into. The vanilla pod open and with a knife scrape the pulp of vanilla.

In a pan put the rose petals, slices of apples, the pulp of the vanilla, zest and lemon juice, the sugar, cover with water.

Put on medium heat and bring to boil. Reduce heat and simmer 20 minutes, stirring occasionally.

So, 20 minutes passed, the rose petals are cooked, allow to cool.

Process everything in blender until smooth. Let stand the cream for 1 hour, and blend again.

Pour in a two liter container and put into the freezer for a day. You can then a couple more times to blend every 2-3 hours, the mass was homogeneous and there was less ice.
