The white chocolate mousse with raspberries
I offer a gentle cream-white chocolate mousse with raspberries. Recipe inspired by French chefs of Serila of Linaka (Cyril Lignac).

Ingredients

  • White chocolate

    120 g

  • Brown sugar

    20 g

  • Water

    1 Tbsp

  • Yolk egg

    2 piece

  • Cream

    250 ml

  • Raspberry

Cooking

Cold cream vzbit to strong fluffy foam. The cream must be fat - 30 percent. of fat and above.

In a saucepan place the sugar and water, stir. Put on the fire to heat and slightly melt the sugar.

I took sugar "Mistral small".

Egg yolks beat with a mixer until the foam.

Then pour the sugar syrup and beat until airy foam.

In a water bath melt white chocolate, adding a couple of tablespoons of whipped cream.

Once the chocolate melt, to pour into it the yolk mass and immediately beat with a mixer until smooth. Cool.

In cold mass parts, to enter the whipped cream, gently stirring with a spatula.

Mousse pour it into moulds, put in the refrigerator for at least 2 hours. Before serving, sprinkle the raspberries and serve.
