My acquaintance with this divine treat was held last year at the exhibition of Indian goods. Attention was drawn to a box with sweets, similar to puff cakes crumbly. Ate and admired in parallel asking the question - what??? On the box I read the basic ingredients - gram flour. Surprised. Any flavor of bean is not in sight.
As soon as I caught the eye of garbanzo bean flour - I've got to find the recipe. What I did, found one of the Indian sites. In principle, everything is simple. But a chore. But the result is worth it, remember this.
Pour into a saucepan cream (milk) and pour the sugar. I had a lump. Sugar and pour if you like it very sweet. In principle, it is enough, it turns out sweet, but not cloyingly.
Put the mixture on a medium heat, stirring, bring to a boil, reduce the heat and cook for...
... to the consistency of cream or condensed milk.
In parallel, on another burner, prepare the second mixture. In a fairly deep saucepan, melt butter.
Pour into it the sifted gram flour. Stir.
Reduce the heat to low and fry our mixture, stirring constantly. This is the most long-lasting step of preparation of burfi. In fact, we cook porridge, the fluid which replaces the oil.
Fry until light brown in color when our compound begins to emit a light nutty smell. It is somewhat change its consistency (you'll see it), becomes thick, and is separated from the bottom of the pan. The whole roasting process takes about 20 minutes.
Pour ground nuts in a blender (leave 20 pieces neat halves for decoration) and a third of a teaspoon of cardamom. Nuts can be in principle arbitrary, just cashews are the best option.
