Bozbash
Bozbash refers to the Azerbaijani national cuisine. In ancient times it was the most honorable dish of the khans.

Ingredients

  • Lamb

    600 g

  • Potatoes

    5 piece

  • Onion

    2 piece

  • Chickpeas

    100 g

  • Tomato

    1 piece

  • Water

    2.5 l

  • Melted butter

    3 Tbsp

  • Saffron

  • Greens

  • Salt

    2 Tbsp

Cooking

Nohut soak in hot water for 2-3 hours before cooking. After cooking for about an hour.

In boiling water put the pieces of lamb. Add salt.

To prepare the vegetables. After half an hour in the boiling broth add the chopped onion. Leave to cook for.

For half an hour or about 45 minutes until tender in the broth put chopped potatoes along.

In a pan fry onion in ghee.

Add the chopped tomato.

In the end, add browned onion, nohut, saffron or half a teaspoon of tumeric to bozbash.

Bozbash when serving sprinkle with herbs.

To taste add sumac or dried mint.
