I thought that the recipe of "the most pancakes" I have found. But recently on an American blog I got the recipe here such pancakes on the ricotta... an Absolute delight! Get a tender, airy and delicious pancake! Especially fond of my children.

Cooking
First, divide the eggs into whites and yolks. Ricotta mix with sugar. Add milk and yolks and stir to combine.
Add the sifted flour and baking powder and stir again. In a separate bowl, beat the egg whites until soft peaks form. Add the whites to the batter, mix gently turning movements...
The dough was very delicate and airy in consistency.
Bake pancakes on a dry pan on both sides until cooked.
Serve with Your favorite sauce; honey, cream, jam, etc.
