Offer you a recipe of Belarusian "rustic delicacy" - a roll of fat. This roll taught me to cook my second mom (in-law). I slightly changed the cooking technique, adapting to urban conditions.

Buying fat, make sure that the skin is easily separated. Peritoneum (podcherevok, podbuzhie) will not work. Separate the fat from the skins.
Sprinkle bacon with two sides with seasoning and salt. Salt sprinkle with a little more than I brine pork chops before frying.
Sprinkle with garlic, cut into "petals".
Tightly wrapped with thread.
Then there are two options: wrap it in foil or put in a sleeve for baking. I have to say, for me, tastier loaf baked in the sleeve, it turns out more fragrant and delicate.
Put the rolls on a baking sheet, put in preheated oven, bake 1 hour and 30 minutes at a temperature of 160-180 degrees.
Put the baked rolls to cool down on a grid to stack excess fat. Remove the cooled rolls for one hour in the refrigerator to cool completely.
Before cutting remove the skin.
