Cooking
Separate the whites from the yolks. Beat the egg yolks with half the sugar. Beat until very light in color, it takes about 5 minutes.
In a separate bowl, beat egg whites until soft peaks form. Continuing to whisk, add the remaining sugar and salt, whisk until all well blended.
Beat in with a wooden spoon whites into the yolks mixture. Do not beat with a mixer! Gently, on top of the egg mixture, sift the flour and mix gently with a spoon.
Put the baking sheet with parchment paper and grease it with oil. Preheat the oven to 190 C. using a pastry bag put the dough on a baking sheet in the form of an oblong fingers. Bake for about 15 minutes. Remove and allow to cool on the baking sheet and then only to remove the paper.
