Ice cake for a Snow Queen
We are going to visit the Snow Queen. Dress warmly, pakutavatest in coats and scarves - I can feel it blowing on us with its winds and blizzards... to appease Her Majesty, bring in it to become a fabulous dessert: lemon biskit cognac ice cream and soft cream cheese with chocolate, candied fruits, nuts and nougat... I think this dessert fit for a Queen and not just Snow )))

  • Chicken egg

Let's start with the shortbread. Lemon zest, pour 125 ml of brandy and leave to infuse overnight or for at least 2 hours. After this time, the cognac can strain and discard the zest, but I prefer to use it.

Preheat the oven to 160 gr. Line a rimmed baking sheet with baking paper. With a mixer beat the butter and 155 g of sugar until creamy. Add one egg yolk, whisking after each addition.

Add the flour with the baking powder and brandy, mix.

Whites beat until stable peaks. Accurately and quickly enter into the dough.

Turn the dough out onto a baking sheet, flatten. Bake for 25 - 30 minutes until dry matches.

In addition to the raisins I add 1.5 tbsp of candied fruit, 1 tsp orange peel, 100 g of nougat with nuts and something like a Turkish delight 120 g chocolate with nuts and bits of waffles.
