Description
This is a universal recipe for living in our family desyatiletij and transmitted from generation to generation. It's not just a recipe for a great, airy and light Apple pie, it is also a wonderful recipe amazing cake for the cake. Recently I had a book by S. Libkin "My Odessa cuisine" and I was very glad that the recipe in his book was exactly as our family (with a small deviation in cooking:)).

Cooking
Prepare the required products. Eggs should be cold.
Separate the whites from the yolks. Beat the whites with a pinch of salt in a solid foam. Beat the yolks with the sugar until white foam.
Add to yolks sifted flour, gradually add the whites and gently mix from the bottom up with a silicone spatula.
Apples wash, dry, peel and seeds, cut into small dice, sprinkle with lemon juice to avoid darkening. Mix with cinnamon.
The form vystelit baking paper, pour half of the batter. Place a layer of apples with cinnamon.
Pour the remaining dough. In a preheated 180* the oven put the form with the dough and do not open 40 minutes. To check the readiness of the cake with a wooden skewer, it should be dry. Order the Apple pie is cooked equally from all sides, a layer of apples should be spread evenly.
Turn off oven, open door and leave pie for another 15 minutes in a warm oven before you take it out and cool on a wire rack. Carefully remove the baking paper, sprinkle the top with icing sugar. When the cake is well cooled, cut into portions, serve with your favourite tea or coffee.
