Description
“Baci di dama”. The salty variant of the famous biscuit "Kiss the ladies" easy and quick to prepare. Goes well with a Cup of tea. Pleasant in all respects a snack for aperitifs and not only.

Cooking
Mix the flour, chopped cold butter, ground almonds and grated Parmesan. Add the wine and a little salt. I use ready almond flour, if it is not enough to grind the peeled almonds to a flour.
Knead a smooth and homogeneous dough.
Divide the dough into small pieces (7-8 g) and form into balls. From this quantity of ingredients you should get about 30 pieces. Put them on a baking tray lined with baking paper, and place in a pre heated oven 180° C for 15-20 min ( until light Golden brown).
Ready biscuits leave to cool for a few minutes.
Then on the lower flat side of the cookies, add the filling and cover with another cookie. For the filling, can be used soft, creamy cheeses, various pates. I used a soft cheese, pate and tuna pate of olives. Serve the cookies are warm, but the chilled version is also very nice.
