Grissini... What a melodious music, purely Italian name. My husband loves the cheese sticks and I bought him in town in the only place in the supermarket. And now I found this easy to do recipe and cook them myself.

Cooking
For making grissini we need: flour, warm water, olive oil, salt, sugar, granulated yeast, Parmesan.
I made a batch in the breadmaker, filled into the container all products except Parmesan cheese and put in the function "first ascent". If you have no breadmaker, pour the yeast with warm water. Add salt, sugar, oil and sifted flour. Knead soft, not sticking to hands the dough, place in a bowl, cover with a towel and leave in a warm place to raise for 1 hour.
Further, according to the recipe you need half of the Parmesan to grate, and the other half into small cubes. I have simplified this process and all shredded in a blender, this was both small and large crumbs of cheese. When the dough will increase in two times and mix up all the cheese in it and again leave to rise for 1 hour.
Here is the finished dough.
Put the dough on a floured surface (my dough doesn't stick, without the flour), lightly mash and Osipyan (or cut) small pieces of dough.
Roll sticks the thickness of a pencil, a length of 20-25 cm It's not easy, Parmesan prevents roll out smoothly and beautifully, but it's not a problem.
The finished sticks are laid on the laid baking paper baking sheet, allow to rise for 15 more minutes. And send in preheated to 180-200 degrees oven. Bake until just brown, about 20 minutes.
The first batch of sticks was too "chubby", and the second is rolled thinner. A total of 30 sticks - grissini.
