Cooking

step-0
In a small bowl add all the ingredients for the Spanish seasonings and mix well with a whisk. Divide the mixture into two equal parts. Put aside. Wash the lemon and cut in half, one half cut into thin slices. From the second half of squeeze the juice.
step-1
Chicken thighs wash, dry. You can substitute chicken Breasts (4 pieces) from which to remove the skin. Place the chicken in a bowl, add 2 tablespoons of oil and soy sauce, mix well. I used Light soy sauce TM Kikkoman. Add one part of Spanish seasonings.
step-2
Mix thoroughly so that every piece of chicken was covered in spices.
step-3
Heat a large frying pan with the remaining 1 tbsp oil. Put the chicken pieces into the pan and fry on medium heat for 2-3 minutes on each side, until browned. Transfer to a plate. Remember, the chicken will not be fully cooked at this point.
step-4
In a pan add the rice, hot chicken broth, the juice of ½ lemon, remaining seasoning, mix well.
step-5
Return the chicken to the pan, placing the pieces on top of the rice. Cover and cook for 20-25 minutes on low heat until the liquid is completely absorbed into the rice. The rice should be tender and chicken is fully ready.
step-6
When serving, garnish with lemon slices and fresh chopped coriander or parsley. Bon appetit!
