Time I specified without taking into account the cooling test. Just for kneading dough and pastries. So...first things First, mix flour + sugar + ground walnuts...

Divide the dough into two equal parts, one add cocoa and again knead well. Cover with film and refrigerate for 30 minutes. This is mandatory because the dough was very stubborn.
Meanwhile, finely chop the nuts, you can grind, but shredded tastes better.
RUB on a coarse grater chocolate.
Set aside the whites, beat lightly with a fork - we don't need the foam, just need to achieve the consistency, when squirrels can be easily spread on the dough.
Prepare 2 sheets of baking paper, which we will roll out the dough.
Take the dough from the refrigerator and roll out each square in layers about 0.5 cm thick. Both layer generously grease with protein.
Carefully transfer one layer to another. Cut in half and roll each into rolls.Remove again in the fridge for 30 minutes, I put 10 minutes in the freezer.
Get rolls after cooling and cut along approximately 1 cm thick. Each of the lubricated protein and coat half of the cookies in nuts and half chocolate (only on the edge, middle left untouched). Spread on a baking sheet, covered with baking paper. Bake at a temperature of about 200° 10-12 minutes.
