Cooking
Pearl barley is washed, pour 2 cups of water overnight. In the morning dump the water, rinse the groats, pour fresh water 2.5 cups, add salt and put to cook on (low heat!!!) cover with a lid then simmer for an hour.
Pork and beef cut into thin strips, across the grain. The combination of pork and beef, give a mind-blowing taste and aroma.
Onions finely cut, carrots three on a coarse grater.
In a small cast-iron kazanchike heat the butter and fry the onion first until transparent.....
.. then add the carrots and all together, on medium heat, fry for a few minutes, stirring...
Now spread the chopped meat and fry for few minutes, stirring occasionally.
Then add water to cover meat, salt, pepper, to taste. Add the pepper peas and Bay leaf. Diminish the fire, cover and stew on low heat for 40 minutes, stirring occasionally. Until the meat is tender.
Once the meat is tender, place the green peas (frozen) in the Throes of all this fragrant beauty on a slow fire, stirring occasionally without closing the lid to leave the excess fluid and remained the consistency like the picture (the meat in vegetable gravy)
Try cereal, after an hour it should be ready. In a colander drain off excess liquid, slightly washed with boiled water and sent to the meat gravy...
Simmer with lid open for 10 more minutes, stirring occasionally. Next, cover with a tight lid, turn off heat and allow to infuse for 10 minutes.
