In 0.5 liters of warm milk, add 1/2 pack of dry yeast and 1 tablespoon of sugar, stir and put in a warm place for 20-30 minutes. Then add 2 handfuls of flour, stir with a whisk to avoid lumps and set aside.

Then put the dough on the table, from all sides to gather it in the center (this is called "make a castle"), flip, cover with a cloth and allow to soak for 10 minutes.
While the dough rises, prepare the fish. To cut it on the fillet (with skin or without skin it as you like), season with salt and pepper and sprinkle with seasoning for fish (this is optional).
