I want to acquaint You with one simple, hearty Greek cuisine. Special is roast sausages with sweet green peppers and tomato sauce. Dish from the Greek province of Thessaly, which stretches between Macedonia and Attica.

Peppers and sausage cut wheels. Not thin.
Warm up in a pan 2 tablespoons of olive oil, add the garlic clove and lightly toasted (not black) then add the pepper and simmered 5 minutes. Not sacarifice much pepper. Set aside the pan with the peppers aside and make sausages.
In a saucepan heat 1 tablespoon of oil, put the chopped onion, cook until lightly browned and sprinkle the sausage, stir and fry until tender. To the tomato add the paprika, oregano, salt and Tabasco.
Pour the tomato sauce into the sausage, there after send roasted peppers. Stir and saute for 5 minutes. At the end add finely sliced parsley. If using fresh tomatoes (about 3 large), cut them in half, grate, skin not use.
