Cooking
Eggplant wash, dry and slice diagonally about 1 cm thick. It is important NOT to SALT the slices of eggplant, otherwise they will let the juice, and then the stuffing may lag behind the eggplant for frying - salt-all perfectly kept.
Prepare the filling: fillet, onion and garlic mince, salt, pepper and season to taste.
Spread stuffing on each slice of eggplant (I put a teaspoon).
Roll eggplant with minced meat in flour, then in salted beaten egg and fry in hot oil first the meat down on medium heat on both sides until cooked.

Do not forget that you want to cook first, meat side down
Better ready eggplant spread on paper towel to remove excess oil (though the eggplant and a little of it absorbed and would still recommend to do so).
