Pumpkin with eggplant in a spicy marinade
Pumpkin with eggplant, baked in the marinade. Starts post and I thought maybe someone come in handy this recipe. Delicious, fragrant, dieticheskie!

Ingredients

  • Pumpkin

    300 g

  • Eggplant

    2 piece

  • Garlic

    3 tooth

  • Spices

  • Olive oil

    4 Tbsp

  • Mustard

    3 Tbsp

  • Honey

    3 Tbsp

  • Sauce

  • Lemon juice

Cooking

The pumpkin and eggplant cut into large pieces, add peeled chopped garlic and marinade for at least 30 minutes with the addition of all other ingredients.

At the same time I tried to cook just the eggplant marinated in exactly the same way, but sliced thinner strips.

Spread the pumpkin and eggplant in a fireproof dish and pour the separated juice, mixed with the marinade.

Bake in a preheated 180-200°C oven until tender. During cooking the vegetable pieces can be several times flip. If Browns too fast, you can decrease the baking temperature.

For the boiled, stewed and baked vegetables I like to serve green Pesto, I add a little bit of "Wasabi" to boot.

And here's the eggplants that I cooked separately. When you to hold a little longer in the oven at a low temperature (100-150°C), as if to dry them. Bon appetit! Fast delicious!
