Pumpkin-spiced cupcakes

  • Pumpkin

    250 g

  • Flour

    2 cup

  • Sugar

    1 cup

  • Chicken egg

  • Sunflower oil

  • Spices

    1 Tbsp

  • Powdered sugar

    100 g

  • Lemon juice

    2 tsp

Pumpkin flesh wrap in foil and bake at 180 degrees for 25-30 minutes, until soft, cool.

Beat eggs well with a pinch of salt and sugar (beat at least 10 minutes). Add the pumpkin flesh (you can pre-blend in a blender). Sift the flour with the baking powder and parts add to the batter, stirring well. All the spicy spices crushed in a mortar, add to the dough. At the end add the vegetable oil and stir until smooth.

Put the dough in molds for muffins and bake at 180 degrees for 20-25 minutes (focus on your oven). Readiness check with a wooden stick, turn off the oven, leave the muffins in it for another 5-7 minutes, remove and cool completely on wire rack. Make the glaze by mixing powdered sugar and lemon juice and cover the cupcakes.
