Machanka in Belarus is kind of a cult. Each family has their signature recipe which is used on special occasions and holidays, because the dish is insanely delicious and nutritious. For 25 years, lived in Belarus, I tried a lot of machanic and eventually made his variation, which is very popular with my family and friends. It is vegetables and spices that give it a distinctive flavor.

Cooking
Kefir pour into a saucepan, add salt and sugar and while stirring bring to a temperature of approximately 60 degrees. Remove from the heat and pour all the flour, mix well, add slightly beaten egg and repaid soda. The dough instantly rises up and increases in size by almost half.
Bake small pancakes on a frying pan greased with sunflower oil for a minute or less on each side.
Pancakes get chubby and porous.
For macanki they should be fairly plump, because the sauce is thick.
Soak dried mushrooms overnight and boil them. Dont pour the broth. Bacon cut in small cubes and fry to make crispy pork rinds.
In the remaining fat fry the ribs, reduce the heat to low, pour half of the mushroom broth, add Bay leaf and simmer until tender about an hour. The liquid should cover the contents of the saucepan, so if necessary, add water.
Sausages fry in sunflower oil until Golden brown, cut into small pieces and add to the finished ribs.
Onions cut into half rings of medium thickness, carrots – straws, and pepper - rings. Fry onion in oil, add carrots, stew several minutes, add pepper, and then cooked mushrooms.
Add the flour, all is well warm up, so the flour has cooked, add sour cream and pour remaining mushroom soup. Season with salt and pepper, add the thyme and crushed juniper berries.
