Bread with wild rice and oatmeal
I don't buy bread, bake it up, I used to delicious, high-quality, sturdy bread. But, despite this "spoiled", this bread I liked extremely - fluffy, delicate and very beautiful. See for yourself.

Boil the wild rice in salted water until tender. You can take grade not only "bubble" and "bubble Mix" or "Aquatica Color Mix".

In the water dissolve the yeast, pour in the water, molasses, vegetable oil, add oatmeal, two kinds of flour mixed with salt (salt should not interact with yeast - it slows down their reaction). Knead the dough. You can use the bread machine, but you can use a mixer with attachments - hooks.

A little about molasses. I suspect that it is not at all. Here is how it looks. Similar to caramel or thick honey. The taste is sweet, caramel. What gives? Color and a pleasant hint of caramel. If you don't have molasses, mix 40 grams of honey and 40 grams of water. In extreme cases, incomplete, add a tablespoon of sugar 70 ml of water. But the taste, of course suffer. And the color of the bread will be different - white. Who often bakes bread, usually has molasses. And I advise you to buy it - is long and is indispensable in some types of bread

Knead the dough for 10 minutes. The dough is wet, sticky. It should be at this stage. After 10 minutes of kneading add the boiled rice.

Knead the dough for another 2 minutes, to form it into a ball, put in a deep bowl, cover with cling film and leave to rise in a warm place for an hour

After an hour the dough will increase more than twice.

Lubricate the inside of the form with butter, sprinkle with flour. Punch down the dough, form a loaf (I got two), brush the surface with milk or egg wash, sprinkle with cereal and boiled rice, cover with a towel and leave to increase in two times. It took me half an hour

Bake in a hot oven (220 degrees) for 12 minutes, then lower the temperature to 200 degrees and bake for another 10 minutes. Remove the bread from the mold, turn on the lower heating mode, reduce the temperature to 180 degrees and bake for another 10 minutes. Remove the bread from the oven, put on the rack, cover with a towel. Cool for one hour
