Muffins with pears and coconut
Offer you easy to prepare muffins with pears and coconut. Very suitable for a cosy home tea cold autumn evenings.

Ingredients

  • Brown sugar

    150 g

  • Chicken egg

    2 piece

  • Butter

    90 g

  • Sour cream

    100 g

  • Flour

    180 g

  • Pear

    4 piece

  • Coconut shavings

    2 Tbsp

  • Leavening agent

    2 tsp

  • Powdered sugar

For cupcakes take the brown sugar, I used "Demerara" TM "Mistral". In a container for whisking eggs, pour the sugar and beat with a mixer at medium speed to foam, about 2 minutes.

Melt butter in the microwave, let it cool, put whipped with sugar eggs, add sour cream, whisk all of 20 seconds.

Add the sifted flour, baking powder, shredded coconut, mix everything with a spatula until smooth.

Take ripe, but not overripe pears. If pears are large, they can be cut in half or into 4 pieces and remove core with a knife. If medium size, with a sharp knife or the special tool remove the core, leaving pear whole. Some authors suggest to remove the peel, I like this pear doesn't like me.

Take a handy molds for baking, I have ramekin. You can put whole small pears in the middle, and then fill with dough up to 2/3. And you can put on the walls at 1/2, 1/3 or 1/4 of the pear and fill with dough. Ramekin put in heated to 180 degrees oven and bake until tender, 30 minutes.

The finished muffins when serving sprinkle with powdered sugar. Bon appetit!
