Carrot cake with cream cottage cheese
A lot of the cupcakes I baked and ate in my entire culinary operation, but the best I ever eat! And these are not empty words! The combination of luscious carrot cake with walnuts, raisins, hint of cinnamon, vanilla and baked cream cheese on top – it can be a rich taste of baked goods. The glaze of white chocolate gives the cake a festive look, this dessert is not ashamed to be enjoyed. And don't forget to tell your guests that this recipe from chef Ronald Mesnier, who worked as the White House. Be sure to prepare this cake, I think (no, I'm sure) that You will love it and "prescribed" in Your kitchen forever, it is no wonder that fed them presidents!))) Ingredients

  • Chicken egg

    3 piece

  • Butter

    200 g

  • Vanilla

    2 tsp

  • Flour

    1 cup

  • Soda

    1 tsp

  • Cinnamon

  • Raisins

    0.25 cup

  • Walnuts

    0.25 cup

  • Cream cheese

    300 g

  • Powdered sugar

    3 Tbsp

  • Brown sugar

    1 cup

For this recipe, very good brown sugar from the Mistral, Demarara. It will give a caramel flavor to Your baking. Butter to melt, cool. Beat with a mixer eggs, sugar, oil and vanilla. Beat 5 minutes, until the consistency of mayonnaise.

For the filling, mix cream cheese, egg, vanilla, and powdered sugar.

Put into a form of carrot batter on top of cottage cheese and cheese. Bake in preheated oven at 180 degrees for 30-35 minutes (this baking time for the shape size as mine, if you take another form and the test will be more, then bake until "Golden brown" and to "dry" matches (toothpicks)) I Have a form of silicone, nothing I had not oiled, and the cake is wonderful "jumped" out of it. If You do not have silicone molds, you will need to pre-pave it with baking paper. It seemed to me that my shape, size 21*8 cm, it will be too small for this amount of dough, I decided to split it into two parts and bake two cupcakes.

The cake to cool and serve with tea. Optionally, you can decorate it with melted white chocolate. Chocolate melt in the microwave mode to "defrost", and using a pastry syringe to squeeze on the cake. My husband and opinions were divided: I believe that the taste of the cake is self-sufficient, and no chocolate here is not necessary, if only for decoration, and he really liked it with the chocolate frosting. So here is a matter of taste, want, do it with icing, want without.
