First make the hollandaise. Egg (room temperature) to separate whites and yolks, put in different bowls. Melt butter in the microwave. In a separate bowl pour the lemon juice and vinegar. Warm up in the microwave 5 seconds.
With a mixer, beat the egg yolks, continuing to mix, add a trickle of bite with the lemon juice. Slowly, not stopping whipping, a thin stream add the warm oil. Salt, pepper. Whisk for 1-2 minutes. The sauce is ready!
But you can still add the beaten egg whites, then it will be airy and light.
Now prepare the poached egg. In all, I know the recipes, it is made in boiling water with vinegar, making a funnel, etc. But I have a great method shared by Elena Chekalova. Here on it I and prepare. In a small mug to pour 4-5 cups of boiling water, add a little vinegar and salt. Break egg and put it in the microwave for 30-50 seconds. Depends on the power. I have 40 seconds. Take out carefully from the water, dry them on a paper towel. Slices of bacon fry in the same way in the microwave and also "dry" on a paper towel. Fry the bread in the toaster or in a dry frying pan, in a word, make a toast. We collect our snacks: dish spread on toast, top with poached egg, bacon, pour sauce, decorate with greens and pierce the egg so the yolk flowed out a little. Delicious, no words. However my husband needed 3-4 of these servings, it is good to have Breakfast, I only need one. With a Cup of good coffee... what could be better?
