This tart has a slightly unusual taste. Despite the fact that it contains cheese, its taste is sweet, but there is a salty aftertaste. This recipe from the savory sweet Stelios Pallaresa, where opposing flavors create a unique game. I will only add that my husband was just crazy about this baking.

Cooking
First make the dough a breeze. You can use the mixer (paddle attachment) or knead by hand. In this case, sift the flour into a bowl, make a well in the centre. Put it in the diced butter, milk, salt, 1/2 tbsp sugar and 1 egg. This dough should not be kneaded for a long time, to hot oil. Also better to do it with cold hands on a cold surface. If the test was a small pieces of butter - nothing to worry about.
Wrap the dough in cling film and leave in the fridge for half an hour. You can leave and at night.
Figs should be cut into cubes, cheese to grate.
In a bowl, whisk whisk 3 eggs 110g sugar.
Add 250g cream, ground black pepper and again mix well everything.
Take the dough out of the fridge. If it's too hard, smash it a little with your hands. Roll out between two sheets of confectionery paper with a thickness of about 4 mm.
Remove the top sheet of paper, turn the dough in the tart form with a diameter of 22cm, place it, then remove the second sheet of paper. The surplus cut. They can be wrapped in plastic and store in the refrigerator for weeks.

Pour on top of our previously prepared a dressing made of eggs, cream, sugar and pepper. Bake in a preheated 180 degree oven for about 40-50 minutes. Cool. Served.
