Kurz potatoes
Kurz is the Dagestan national dish, similar to our dumplings. From the usual dumplings Kurz have a particular way of sculpting and a little more spicy filling. There are many recipes kurze stuffed with various fillings, I suggest potatoes.

Ingredients

  • Flour

    380 g

  • Water

    250 g

  • Vegetable oil

    3 Tbsp

  • Vinegar

    1 Tbsp

  • Salt

    1 tsp

  • Potatoes

    450 g

  • Dill

    20 g

  • Onion

    150 g

  • Vegetable oil

    1.5 Tbsp

  • Salt

    0.5 tsp

  • Peppers red hot chilli

    0.25 tsp

Cooking

In a bowl sift the flour with salt, make a hole.

Pour in the middle of the water.

Then add the vegetable oil and vinegar.

Knead the dough (may need to add a little more flour, about 20 gr.). Cover the dough with a towel and leave to rest.

Meanwhile, the potatoes, wash and boil until tender in salted water.

Peel the onion, wash, cut into cubes and fry in vegetable oil.

Dill wash and finely chop.

With potatoes drain the broth, but not pour it. Mash the potatoes, add 80 ml of potato broth and again to stretch.

In mashed potatoes add dill, pepper and fried onion. Mix well. The stuffing is ready.
