Golden buns
On December 13, Sweden celebrates Lucia Day – a festival of lights and harbinger of Christmas. On this day in churches and cathedrals girls dressed in white dresses with red belt, at the head of "Lucia" with a crown of candles on her head singing Christmas songs. In the houses of the same younger woman delivers Breakfast to the family members coffee/mulled wine and biscuits in the shape of "S" - "lussekatter". These muffins are not very sweet, fluffy, soft and melt in your mouth, and they are a beautiful Golden color thanks to the addition of saffron or turmeric. Raisins also gives extra sweetness. Preparing muffins is quite simple, and the result is simply stunning!

Ingredients

  • Milk

    180 ml

  • Saffron

    0.5 tsp

  • Brown sugar

    50 g

  • Yeast

    7 g

  • Flour

    500 g

  • Salt

    0.5 tsp

  • Cardamom

    0.25 tsp

  • Butter

    55 g

  • Sour cream

    60 ml

  • Chicken egg

    2 piece

  • Raisins

In a small saucepan, combine the milk, saffron (or turmeric) 1 tsp of sugar. (Traditionally, of course, used saffron, but in its absence you can use turmeric.) Bring to the boil and stir so that the sugar is completely dissolved. Remove from heat and allow to cool to 40C, the mixture should be warm but not hot.

If You have a bread maker, you must do the following: in the HB bucket to pour the milk, the butter-egg mixture, salt, sugar, cardamom, flour and yeast. Set the mode "the Dough". If You are not happy owner of this device, then do the following: in the warm milk add the yeast and leave for 5-10 minutes until the "cap". At this time mix the flour, sugar, salt and cardamom. In the center make a well and pour the milk with yeast and the butter-egg mixture, mix well. Knead the dough by hand or using a mixer with an attachment "hook", if necessary adding flour. The dough should be slightly (!) sticky.

The dough to form a bun and put in a large container, cover with a towel or cling film and leave in a warm place for 1-2 hours until the volume increases 2 times. If desired, the dough can be left in the refrigerator overnight.

When the dough has doubled, punch down and some of its hybrids. Pinch off a piece of dough (60-70 g) and roll it into a ball shape. (Should make 12-14 balls.) Table sprinkle with flour, each ball roll into a strip with a length of approximately 20 cm.

To give the strip the shape of the letter "S", i.e. to make a spiral with both ends turned in different directions. Transfer to a baking tray lined with parchment or a silicone Mat. Cover with a towel or cling film and leave to stand for 30-60 minutes.

The dough should increase in 1,5 times. Lubricate the workpiece and the top side with beaten egg, in the centers of the spiral "S" to put pre-soaked raisins.

Put in a preheated 200 degree oven for 15 minutes, the scones should be Golden brown. Before serving, allow to cool slightly.
