Penne alla Norma
Sicily is a very popular pasta with eggplant alla Norma. "Alla Norma" — because this sauce is dedicated to the homonymous Opera by brilliant composer Vincenzo Bellini. About the appearance of this recipe tell you a story: when "Norma" was first performed on the stage of La Scala, it seemed no one appreciated, and the Bellini was in despair. However, since the next evening, the audience began to realize that Opera is a masterpiece!!! And once starved group of fans of the "Norm", returning with another show, found that the late and restaurants were closed, but they managed to persuade one innkeeper to feed them what's left in the kitchen. So from the remnants of fried eggplant, tomatoes, smoked ricotta and Basil formed a sauce called "alla Norma" in honor of the late fans of the Opera "Norma".

Ingredients

  • Penne

    150 g

  • Eggplant

    1 piece

  • Garlic

    1 tooth

  • Tomato

    2 piece

  • Olive oil

  • Ricotta

  • Basil

  • Salt

Cooking

Cut eggplant by slicing into longitudinal slices very thinly, sprinkle with salt and leave for 15 minutes. Then rinse and squeeze.

Fry eggplant in oil and dry.

Chop the tomatoes into cubes, put in a sieve to drain excess liquid.

Fry garlic cloves in butter, add tomatoes and torn Basil leaves, season with salt.

Boil Penne al dente. Cooked pasta into the pan with the tomatoes, add the eggplant, stir. When serving, sprinkle with grated smoked ricotta.
