Ingilby pie
If you notice that the sky in the morning was clear blue and not whitish, as in the summer, the leaves on the trees gradually began to be painted in caramel colors (but not from the cold but from the burnt by the sun) that in the markets rinachka sell figs and almonds, and raspberries gave a second crop - so it's September and you're definitely in the Crimea! So, ingilby cake with caramel and almond cream and goat cheese.

Ingredients

In filling, we use chopped almonds, so let's start with cleaning it. Nuts pour boiling water, then immediately rinse with cold running water. Repeat this procedure a couple of times. After that, the nucleolus just POPs out of the skin when pressed.

Then pour the peeled nuts on a baking sheet in a single layer and a little dried in the preheated oven.

If the almonds hold a couple hours in the freezer, it is perfectly milled in a coffee grinder. If you like, to nuts got by heart, then it is better to mash these in a mortar.

For the pastry cold butter, salt and sugar grind in a food processor with the flour.

To the mixture add the cold water and quickly knead the dough, which we remove for an hour in the fridge.

After the dough thinly roll out and put on floured shallow baking pan (ø 26 cm). The dough is often pinned with a fork and bake for 10 minutes until soft in a preheated 180 deg. the oven.

For the cream mix the milk with the sugar, eggs and softened butter, vanilla sugar, brandy and almond flakes. All mix well with a whisk. Pour 2/3 of the mixture into a small saucepan and while stirring bring to a thick.

Spread the cream on the prepared dough. Figs cut into 4 slices, not cutting through to the end, and seated in the cream, pressing slightly. Sprinkle all with 1 tablespoon of brown sugar to caramelize.

Then on top pour the remaining raw egg-milk mixture and again sprinkle with brown sugar.

Put the pie in a preheated 180 degree oven and bake about 30 minutes until cooked cream. The finished cake let cool slightly in each ingerence put a teaspoon of goat cheese and decorate with raspberries. Goat cream cheese gently melts on the warm caramelized figs and gives a unique spicy flavor. If you don't like it, you can replace it with any other cream cheese or ice cream, and generally to do without it.
