Kozuli
Kozuli — ceremonial cookies made from wheat or rye flour, often in the form of sheep, cows, horses. Goat gifts caroling, family, fertility pills they were fed to livestock, used as a talisman for the barn and stables. In addition, ROE was used for the Christmas divination. I cooked half the portion and left quite a lot of ROE. In Tolstoganova pan on low heat melt until brown 2 stack. sugar. Stir constantly with a wooden spoon. Dissolve all until smooth. Add in another 2 stack. again, sugar and, stirring, dissolve the sugar in the syrup.

When this happened, remove from the heat and add 400 g of margarine. Stir. Melted margarine will float on top of the sugar syrup – nothing. Pour the mass in a deeper pan, let cool. Meanwhile, stir in a Cup of 3 eggs and 5 egg yolks as the eggs. Pour the eggs into the cooled sugar mass. Add 0,5 tsp of salt and 2-3 tablespoons of the spice blend consisting of cinnamon, ginger, nutmeg, cardamom and ground cloves. In General, the recipe of this ratio 2:1:1:1:1. But you can mix to your liking. I love cinnamon and it added a little more. There also add 2 tsp of soda.

Gradually adding the sifted flour, knead the dough. You may find that the dough requires more flour, but do not add extra, otherwise ROE will be hard. When the dough stand up, it will cease to stick to hands, will be like sweet and fragrant playdough :-) Kneaded dough leave for one day in a cool place. But my dough only stood the night on the windowsill.

The next day roll out the dough thickness of 0.5-0.7 cm and cut out figures. Can use the standard hearts, diamonds, stars. And you can cut the figures out of cardboard and gently putting them to the test, sharp craft knife to cut the dough.

You can simply beat the whites with the sugar.

P. S. Cookie to better to do not a small size, thin you roll in the oven not to overdo, then the cookie will be soft. But I last tray of cookies after turning off the oven was too lazy to pull out, so they became harsh. If on top of the white frosting a little sprinkle of powdered sugar, then after a while the frosting will be covered with a thin crispy crust and the inside will be creamy:-)
