Cabbage disassemble into individual leaves and blanch them in boiling water for several minutes so they become soft.
With chicken legs cut the meat. I didn't do it very thoroughly as the thought of bones with some meat to make broth. Using a kitchen processor, chop chicken, add garlic, ginger, pistachios, peppers, onions, cilantro, soy sauce, olive oil, juice and zest of lime.
Will have such a homogeneous mass. Can be slightly prisolit to taste. Don't be afraid of color :)
On cabbage leaf put some of the stuffing and twist the sheet envelope (as ordinary cabbage rolls).
I had 14 here such beauties. And then tightly put the wrappers in a steamer and cook for a couple of minutes 6-7. I have no double boiler, so I use the "steam kitchen" is a microwave oven.
While preparing the envelopes, make the sauce. To do this, grind in food processor the garlic, the pepper without seeds, grated fresh ginger and pickled, zest (1 tbsp) and juice of a whole lime and coriander. Take a small saucepan and put sugar and a couple tablespoons of water. Place the saucepan on medium heat and heat, stirring constantly, until the sugar is completely dissolved. Add into the saucepan the contents of the processor, bring to a boil, pour into it the vinegar and soy sauce. Stir and cook for another 1 minute. Remove the sauce from heat and refrigerate before serving. This sauce can be made in advance. It turns out awesome taste - both sweet and sour and spicy!
Serve envelopes, sprinkled with toasted sesame seeds with the sauce.
