I because of my laziness, the dough is manually stopped kneading with since I bought a bread maker. All the ingredients for the dough put it in the bucket of a bread machine, put it on the "pizza" (45 minutes), don't worry the dough first, it turns watery, leave in bread machine for another 30 minutes, there it rises and thickens. FOR THOSE WHO KNEAD by hand: (the author's words) To the warm milk add 1 teaspoon of sugar, crumble the yeast and leave for 10 minutes in a warm place. With a fork, beat the egg, softened butter, sugar. Add the sifted flour, yeast, cream, lemon zest and salt. Knead the dough. Leave it to rise in a warm place for 30 minutes.( the author was fresh yeast - 30 gr., and instead of sour cream)
While suitable dough, prepare the filling. Mix cottage cheese (preferably dry and granular), egg yolk, sugar, vanilla sugar, lemon zest.
For stroitelya (crumbs), mix the flour, butter, grated on a coarse grater, icing sugar, vanilla sugar. All grind into crumbs.
The dough press down, divide into 30 pieces, each in the palm knead in a circle, put the stuffing, stung and lay on a baking sheet (greased and covered with paper) with pockets down. Cakes to coat with egg yolk and sprinkle with crumbs. Leave for 15 minutes in the warmth to come. Bake in heated oven to 180 gr., 20-25 minutes. Output - 30 pieces.
