Carrot cupcakes
Delicious and easy to prepare muffins, the ingredients for which are mixed with a whisk. They include the grated apples, which optionally can be replaced with pineapple, raisins or currants. And cream frosting, covering the surface of the cupcakes, creates a wealth of taste! Nearly impossible to put down!

Ingredients

  • Flour

    175 g

  • Soda

    1 tsp

  • Salt

    0.25 tsp

  • Walnuts

    65 g

  • Chicken egg

    2 piece

  • Sugar

    135 g

  • Vanilla

    1 piece

  • Grape seed oil

    160 ml

  • Apple

    150 g

  • Carrots

    225 g

  • Butter

    55 g

  • Cream cheese

    115 g

  • Powdered sugar

    250 g

Cooking

In a large bowl, whisk together the flour, baking soda, and salt.

Add the crushed walnuts.

And mix well.

In another bowl, lightly whisk eggs.

Add the sugar and the pulp of 1/2 vanilla bean (or 1/4 tsp of vanilla) and beat slightly.

Continuing to whisk, slowly pour in the grapeseed oil, until then, until the mixture slightly thickens (about two minutes).

Add grated Apple, lightly whisk.

Stir with a whisk grated carrots.

The resulting mixture add to flour and stir with a spatula for 20-30 seconds.

Fill in the test paper molds for cupcakes set in rigid form. It is convenient to use for ice cream spoon. You can also use silicone muffin cups or metal, then they must be lubricated with oil.

Bake in a preheated 180 degree oven for 25 minutes. Finished cakes cool completely.

For cream icing beat the butter and cream cheese at room temperature until smooth.

Add the pulp of 1/2 vanilla bean (or 1/4 tsp of vanilla) and 1/4 of the powdered sugar and whip 15 seconds, three taps to add even a 1/4 of the powder, each time whisking for 15 seconds.

Fill cream pastry bag and decorate cupcakes as desired.
