Cheshire pork pie
The application of the test in the form of a shell turns any loaf into a paste with stable, which itself is a decoration of the dish. You can decorate the pate, giving it an unusual shape, or prepare it in a finished form, like I did. Selection test for paste depending on Your taste and how dense would the filling: wet filling may leak if the dough will be fragile. "The dough into the hot water" (Hot Water Crust) – very strong and firm dough, it is capable to keep even a very moist stuffing, and can acquire any shape.

Ingredients

  • Flour

    375 g

  • Butter

    175 g

  • Water

    150 ml

  • Salt

  • Powdered sugar

    1.5 tsp

    1 kg

  • Fat

  • Onion

  • Apple

  • Lemon

  • Pistachios

  • Vinegar

    2 Tbsp

  • Honey

    0.5 tsp

  • Brown sugar

    1 Tbsp

  • Juice

    1 cup

  • Gelatin

    1 tsp

  • Chicken egg

Cut butter or fat cubes and put them in a pot of cold water.

Bring to a boil over medium heat and remove. If some of the cubes remain solid fat, stir contents of pan until the fat melts.

Sift the flour, salt and powder (if using) in a large bowl. Make a well and pour the hot fat solution. Mix thoroughly, cover with a towel and let it cool off. Then gather the dough with your hands and let it stand about half an hour. During this time the dough will become dense, but still able to take any form.

Prepare stuffing. 2/3 pork and bacon mince. The remaining 1/3 cut into very small cubes. Onions finely crumble. Add the peeled pistachios and spices. Tip: fry a small piece of meat in the pan and try to spice! If You like just measure, add another small amount of spice.

Prepare the fill. 2 tbsp Apple cider vinegar 1 tbsp brown sugar 1/2 tsp honey mix and add water so that the volume was 100 ml. Add this mixture to the mince and knead everything thoroughly!

Apples peel and cut into small slices, sprinkle with juice of half a lemon.

Begin to collect our pie. 2/3 part of the test generated by the form.

Put layers of beef and apples, so that the last layer was minced.

Cover with the remaining batter. Do decorations and be sure to cut a vent for steam. The top is lubricated with egg and put into oven (190°C) for 1.5 hours. 15 minutes before finishing baking again grease the dough with egg.

Remove from oven and allow to cool a little.
