1. Eggplant cut into cubes.
3. Put in a colander and let the juice drain out (do not wring!!!)
4. While flows the juice from the eggplant, make the sauce. Finely chop onion, carrot, pepper, tomatoes (peeled).
5. Stew it all in vegetable oil in a frying pan until tender. ( not roast!), at the end add salt and black pepper.

7. While fried sauce, make meatballs. In minced eggplant, add salt, egg, flour, black pepper.
8. Mix well with your hands.
9. Take a tablespoon and type into it the stuffing of the eggplant. You can just spoon into the pan, giving the form of flat patties, but you can with your hands to form flat cutlets. ( the meat does not stick).
10. Fry both the sides until Golden brown until done.
12. Spread on a dish of cakes.
13. On each cutlet spread with a spoon the gravy.
