Chicken Chinese from Vassilis Kallidis
I don't know why, but this Greek cook really reminds me of James Oliver. Not externally, no. But he's also young, energetic, not afraid of new experiments. This version of the Chinese chicken I saw a few years ago in the television program with the participation of Vasilisa. Tried and liked it as indescribable! Since then prepare this chicken often. Very tasty, fragrant dish. Sesame oil with various vegetables, pineapple, soy sauce, curry, apricot jam create a unique sour-sweet taste and excellent flavor. Prepared quickly, served with basmati rice, is eaten in full.

In a wok with vegetable oil put the chicken pieces, cut into cubes, sprinkle with salt. Fry.

Add onion, cut into half rings and garlic finely chopped. Stirring, fry for a few minutes. Optionally add the ginger.

Put in a wok carrots, cut into cubes, stir. Fry also within a few minutes.

Came the turn to add the peppers. Stir fry for 2-3 minutes.

Then put pineapple. Here I will note that the author of the recipe had specified that the pineapple you need to take fresh. You can use canned pineapple, it is better not to add. Always adhered to this recommendation.

Finally add broccoli, disassembled into florets. Here I also clarify that broccoli should be pre-dipped in boiling water for a few minutes, and then shift into the icy water. But since my family can not stand broccoli in a mild form, I put without pre-treatment.

While our vegetables are simmered for a few minutes all together, make the sauce. To do this, in a small bowl, mix apricot preserves, soy sauce, vinegar, curry, sesame oil. Try a little sauce. You may want to add more sweetness or vinegar.

Add the sauce into the wok, stir. Simmer for another few minutes. Remove from heat, serve with rice. From the top you can sprinkle with sesame seeds.
