Carrot soup with lemon and ginger
The heat... summer is in full swing, and, of course, cold vegetable soup is what you need now. Share with you, my dear cooks, this recipe unusual soup, which is a nice refresh us in the summer heat.

Ingredients

  • Vegetable oil

    2 Tbsp

  • Lemon

    1 piece

  • Garlic

    3 tooth

  • Tomato

    1 piece

  • Ginger

    1 Tbsp

  • Onion

    1 piece

  • Carrots

    4 piece

  • Salt

  • Black pepper

Finely chop or wipe with carrots, onions and garlic, cut and add to the pot. Tomatoes, already peeled, goes to the same place. We scald tomatoes, skin and fades very easily. And the first on the bottom of the pan pour the oil.

Add the ginger and lemon zest (1 tablespoon).

Add the herbs, I like parsley and add it everywhere. And tormented on low heat for 5 minutes.

Then all beat with a blender and add vegetable broth or vegetable juice or just water like I do, because the vegetable taste is good. Cook for another 15-20 minutes. Add the juice of the squeezed lemon. And for the soup to cool. Serve with lemon and herbs to taste. And don't forget to season with salt and pepper.
