Oatmeal cookies with pistachios Solnyshko
Inviting for a Cup of tea with a bright and healthy biscuits. Light acidity, nuts and sun "appearance" will not leave anyone indifferent, neither children nor adults.

Ingredients

  • Oat flakes

    80 g

  • Pistachios

    60 g

  • Brown sugar

    60 g

  • Flour

    130 g

  • Orange zest

    1 Tbsp

  • Honey

    100 g

  • Vegetable oil

    100 g

  • Leavening agent

    1 tsp

  • Salt

    1 pinch

  • Dried apricots

    100 g

  • Orange juice

    60 ml

In a bowl, combine sifted flour, oats, brown sugar, orange zest, baking powder and salt, add chopped nuts.

Add the crushed pistachios.

In another bowl, combine honey and vegetable oil.

Add the liquid ingredients to the dry mixture, knead the dough. Roll into balls size of a walnut, lay them on a baking tray lined with baking paper, at a distance of 5 cm from each other.

Slightly flatten, forming a pancake. Bake in preheated to 170 degree oven for 10-12 minutes.

To give the cookies to cool completely.

For the filling, washed dried apricots pour orange juice in a small saucepan, bring to boil and then on medium heat for 1 minute. Fire to remove, let stand 15 minutes. Transfer to a blender and grind to puree. Cool completely.

Spread fruit filling on one cookie and cover with second cookie, press them a little. In a similar way to connect all the pairs of cookies.
