Cooking
Bring milk to a boil. Add salt, nutmeg and 40g of butter. Gradually add in the milk, semolina and cook, stirring all the time, 5-10 minutes. Remove from heat and add 2 raw egg yolks and 50g of grated Parmesan (or Grana Padano). All mix well. A large cutting Board or baking sheet wetted with water and spread it on the cooked weight. Spread with a broad knife (wet the knife in water so that the mixture doesn't stick). To obtain a flat layer with a height of 1cm. Leave to cool (at room temperature!).
Cut with glass or cookie cutter circles and spread on a greased baking sheet. Pour melted butter and sprinkle with grated Parmesan cheese and Dutch cheese.
Bake in the oven preheated to 200град., about 20 min. (until Golden brown). Bon appetit!
