San Jacobo eggplant
Simple, economical" new ways" dish. Crisp, spicy eggplant and juicy cheese filling. San Jacobo is a very popular snack among Spanish children, there are many variations of this dish with different fillings. One day, in Seville in the restaurant ordered a San Jacobo, and brought me a dish the size of a baking sheet, and on it the san Jacobo size Shoe size 45. We ate everything!!! So possible experiments weight. The most common San Jacobo ham, ham and cheese, but here in Andalusia are doing it from eggplant.

Ingredients

  • Eggplant

  • Ham

    100 g

  • Dutch cheese

    100 g

  • Chicken egg

    2 piece

  • Bread crumbs

  • Spices

  • Allspice

  • Salt

Cooking

Eggplant cut along the plates

Sprinkle with spices, salt-pepper to taste

Spread on top of ham and cheese

Fold the halves

2 eggs mix with spices, salt and pepper

Dip eggplant in egg mixture

And sprinkle with breadcrumbs, repeating twice: eggs-breadcrumbs
