Dessert with semolina, pistachio and dried apricots
My family, unlike me, I love semolina. And this recipe even interested me. Just curious, if I change my opinion about this product. Hot is not very good, but chilled is not only ate one jar, but turned around and asked.

Ingredients

  • Sugar

    50 g

  • Yolk egg

    2 piece

  • Dried apricots

  • Pistachios

    60 g

  • Milk

    500 ml

  • Semolina

    70 g

  • Vanilla essence

For this recipe I used Semolina brand "Mistral".

Grind the pistachios with a knife.

Milk bring to boil with a few drops of vanilla essence. While the milk is being prepared, RUB the yolks with sugar white.

Then "tempering" the egg yolks. Ie pour a small amount of hot milk into yolks, stir well and then pour the remaining milk.

Then the resulting mixture is heated on a steam bath for 5 minutes, stirring constantly. The whole process is similar to cooking a creme anglaise, but we are in any case not necessary, so that the cream thickens.

Add the semolina, stirring constantly, until the consistency is like dough for pancakes.

Then add the pistachios, stir.

And chopped dried apricots. Once I added the apricots, remove from heat.

Sort them into jars. Chill in refrigerator, but better to leave for a few hours. And before serving, I sprinkled with sugar and browned with a kitchen torch. But this is not necessary.
