Leche frita. A caloric bomb!

  • Corn starch

    120 g

  • Chicken egg

  • Cinnamon

750 ml milk pour into a saucepan, add the cinnamon (optional), citrus peel (optional), put on fire and bring to boil. Then close the lid and leave for 10 minutes.

In the remaining milk (250 ml) thoroughly stir the starch until homogenous mass (no lumps). Instead of cornstarch you can use flour, but not potato starch - it will be gentle.

Yolks lightly whisk to obtain a homogeneous mass. For greater tenderness of dessert made with egg yolks you can remove the tape gently pierce the yolk contents drained, and the tape to throw away. The yolks can not put at all, but then again, they are used to make the dessert more tenderness.

Now mix the starch and the yolk mass.

Of hot milk remove cover, add sugar, put on medium heat and wait until the sugar has dissolved.

Important: do not let the mixture boil!! Typically, the mass begins to rapidly thicken before it boils, so be careful.

Should be thick and smooth like custard. By the way, this dessert is essentially a custard and fried in oil. But it's delicious!

It is desirable to choose such dishes that the thickness of the cream was 2-3 cm Then the mass is gently even out and leave for several hours to allow them to cool and set. You can leave for the night, which I did. The fridge cleaning is not necessary, leave at room temperature.

Then turn the bowl of cream on the work surface and cut into small rectangles or squares. After hardening of the cream takes on the consistency similar to jelly, so well cut, but is still very gentle and soft, so work with it carefully.
