Description
It's a muffin with prunes, dried cranberries, coffee and cognac. Amazingly delicious cake! Rich, moderately moist but light. To cook quickly and easily.

Cooking
Washed and dried prunes cut into small cubes. Cranberries (or raisins), wash and dry.
Sent prunes and cranberries in a bowl, pour in the cognac and add the soda.
Then pour 2 teaspoons of instant coffee to 150 ml of boiling water, stir and pour into a bowl. The mixture begins to slightly foaming, this is normal. Leave the mixture for 10 minutes. This bowl will call "wet". If you don't like coffee, then you can simply pour the boiling water, the taste of the cake will change, but will not become worse.
Separately mix flour, sugar, vanilla sugar and baking powder. This is our "dry" bowl.
Melt the oil. Melt butter on low heat just until the emulsion to boil it is not necessary.
In a bowl with the melted butter pour the contents of the "dry" bowl. Stir with a mixer to obtain small lumps.
One by one, add eggs, each time involving the egg in the dough. Eggs should be at room temperature. If you got them straight from the fridge, warm them by putting for 10 minutes in a saucepan with hot water.
Beat in eggs until mixture is smooth.
Add to the dough contents of the wet bowl and mix well. Pour the dough into the form, greased and lightly floured.
Bake 40-45 minutes at a temperature of 160 deg. C. the Dough rises well. Willingness to check with a dry splinter. Take out of the oven. Leave the cake in the form for 15 minutes, having spread under the form of a wet towel. Turn the form ready and fully cooled cupcake.
You can sprinkle ready the cooled cake with powdered sugar, you can pour sugar syrup, you can decorate with melted in a small quantity of cream white chocolate. You can eat just like that, the cupcake is quite self-sufficient.
