Cooking
To prepare the products.
Leeks, garlic finely chopped, broccoli disassemble on inflorescences. A saucepan with a thick bottom, put on fire, add oil, onion, garlic and lightly fry, then add broccoli, water and simmer over moderate heat with the lid closed 15 minutes. At the end of cooking add salt, pepper and grind in a blender until smooth.
Preparing the mousse: in a container for shredding to put crab sticks, a small amount of garlic, cream cheese and grind until smooth.
With toast bread cut the peel and cut the flesh into cubes, then spread on a pan with a little oil and fry on moderate heat.
In soup bowls pour the soup over the top to put a quenelle of the mousse on top and garnish with radish sprouts.
