Pancakes in Staraya Russa with herring and cottage cheese
Mardi Gras is in full swing, and now I just couldn't not prepare these extraordinary, fantastically delicious pancakes in Staraya Russa. In the early 2000 years they were sold in Moscow in the cafe "Teremok&am p;quot; in all branches. For the very first time I was attracted by the unusual name of the pancakes - like this? Herring and suddenly the cheese...?? Does this fit in?... I was pereprobovali in Attics all the toppings, but eventually settled on these and always bought them only for the ears was impossible to pull, how it was tasty!! Imagine my chagrin when a "beautiful" day they were removed from the menu! : ( I turned to the authorities asking to return them, but the answer was something unintelligible... this Is yummy in Attics began to prepare something similar, think they were called "pancakes with mincemeat". But there herring was sliced, the cheese was missing, and taste it wasn't the same! Then they also removed from the menu... Those old Russian pancakes and stuck in my memory, and now they want even more than before! Today I decided to treat myself to a holiday belly. After all, Mardi Gras. Try it and You! I think that You will want to repeat it again and again :)

Cooking

step-0
The dough for pancakes every housewife does on its own. My mom once gave me a simple and memorable recipe: 3-2-1. That is 3 eggs, 2 cups milk, 1 Cup of flour. With these proportions always turned out delicious pancakes. But now I almost never observe these proportions, always just put on the eye. Today decided to add a pinch of baking soda and a little (just a little bit, also a pinch) of sugar. So, eggs, salt, sugar and soda whisk, gradually introduce the milk and whisk all together.
step-1
Little by little introduce the flour, continuing to whisk. Achieve a uniform consistency.
step-2
Put the dough to rest, and in the time taken for the filling. For the filling, we need the fillet is not too salty herring, fresh dill and cheese + spoon of sour cream for tenderness, if desired.
step-3
Steeped in dill mix salt+soda+water. I have always made my greens so, on the advice of the doctor (if you do not want, you do not have). After soaking (5-7 minutes) rinse in a bowl with running water). All krakozyabry will die. Some of them can only be seen through a microscope, so don't think that green is "clean" if there's no one in sight. While soaked dill, cleaned herring (on YouTube there is a very good video on how to do this quickly and very easily). On request, give a link.
step-4
Just want to say that the proportions in the stuffing can be changed at their discretion. For example, to take more herring and less cheese, or Vice versa. Today I took the same herring and cottage cheese and a small bunch of dill, 50 grams. So, cut herring in small pieces.
step-5
Herring grind in small grinder, or like me, in a blender.
step-6
10 seconds enter the cheese and chopped dill.
step-7
As should all mix into a homogeneous mass. Try the taste. Adjust proportions as desired. If necessary, add the cheese, if necessary - herring, if necessary - doselevel. Or leave it as it is).
step-8
Add a dollop of sour cream (optional). All mix well. The stuffing is ready!
step-9
Now, begin to bake pancakes. At the beginning of baking lightly grease with butter the pan. After that I pan no more smear because vegetable oil is added directly into the dough before baking, and a good mix.
step-10
Baked not too thin pancake.
step-11
The filling should be put quickly, until the pancake is hot. Generally, these pancakes are extremely tasty while hot or at least warm. If they get cold, it is best just before serving to warm them. In General, the principle is this: when the guests arrive, the pancakes should be hot, they must quickly stuff and serve :) so, put a full tablespoon of the filling, spread half of the pancake.
step-12
Turn the pancake into a tube (or as you like).
step-13
The same is done with the rest of the pancakes. The remaining filling on the "cheers" will go as "namazyvaete" for Breakfast.
step-14
If you want you can eat whole or cut into serving pieces. Pancakes are very hearty!
step-15
It's unique, fabulous taste! Good thing my husband only likes sweet pancakes))) I will get all of the most delicious!! Well, today he will eat pancakes with orange marmalade. This warm cozy evening we will quietly, in the family to drink tea and enjoy the sounds of your favorite jazz... Happy carnival to all! :-)
