Vegetable soup with mussels
Hearty vegetable soup for a light dinner in a hurry. Prepared easily and quickly, pleases the eye with its pleasant color, and stomach - healthy vegetables.

Ingredients

  • Mussels

    200 g

  • Roots

    1 Tbsp

  • Cream

    150 ml

  • Salt

  • Water

    2 l

  • Vegetables

    200 g

Cooking

Potatoes cut into medium cubes.

Add potatoes to boiling water (I had broth) and cook until tender.

When I boil soups, I always add a mixture of roots. Here I put in 1 tablespoon.

I have in the fridge there was half a pack of frozen vegetable mix and a few mussels.

When potatoes are almost cooked, add vegetable mixture. Cook for 10-15 minutes.

Finally add the mussels, a little leaving a reserve. Cook for another 5-7 minutes.

Remove from the heat and whisk everything in a blender until the formation of a puree. Add the cream, mix up well and also put the remaining in reserve the whole mussels. At 2 minutes, return to fire, add salt and pepper to taste.
