Spicy carrot-a vegetable soup with coriander
Most likely you this soup is not eating, because this is a recipe of a local restaurant, slightly modified by me. Spicy, silky consistency of vegetable soup. Try it - you will not regret!

Ingredients

  • Onion

  • Garlic

  • Coconut oil

    2 Tbsp

  • Coconut shavings

  • Olive oil

We cut the onions and start to fry in coconut oil with a blend of olive, coconut as it is quickly absorbed into the vegetables. Can olive or any. In slightly fried onions add chopped garlic and fry 1 min. Add coconut and fry for another minute. Throw all the spices and one minute.

Throw in there the potatoes and mix well. Fry for two minutes.

Now the carrots, stir again and if necessary add a little bit of oil.

Now all the beets and mix well. If you currently beet no - no place. In the recipe it really wasn't. I just decided that beet vegetable soup will not spoil the color and add.

Now add water, that would be all well protesilaus. If you want soup-Navarette, then add chicken broth. I love light soups. Wait until boil.

Cover with a lid and on low heat cook for approximately 30 minutes or until the vegetables are ready. When you open the lid, the vegetables should not swim, and the water should be only half.

Now putting everything into a blender or use what you have and well punched to a pulp.

While you are preparing mashed potatoes, if you like - toss a small bunch of green coriander in blender. Even if you do not like - it will turn into mashed potatoes and still have a pleasant taste.

Return everything to your pot or pan. Add half a Cup of milk or cream or sour cream. Be guided by your taste. Adjust the density to your liking. I half a Cup of milk was enough. CAREFULLY around the plate - make the minimum fire, as spits mashed potatoes!

I usually don't add salt. In fact, the recipe includes coconut milk and it is added along with the usual. BUT I have never been here. So I fried in coconut oil with the coconut chip. It turned out very not bad.
