American cupcakes
Cupcakes came to us from America, where they gained special popularity. Cupcake unlike the muffin is a small cake, the size of a Cup. Though muffins and cupcakes are similar, they are two completely different dessert. Muffin is basically a bread and a cupcake cake or cake. Cupcake is different because it is made from biscuit dough, which is more dense than the muffins, the size is a bit smaller and certainly wears the cap of the cream. (info from another site)

Ingredients

  • Flour

    300 g

  • Brown sugar

    1 cup

  • Cocoa powder

    4 Tbsp

  • Soda

    0.5 tsp

  • Butter

    90 g

  • Water

    120 ml

  • Vanilla

    1 pack

  • Chicken egg

    1 piece

  • Cream

    2 Tbsp

  • Chocolate milk

    1 piece

  • Egg white

    2 piece

  • Sugar

    0.5 cup

  • Salt

    0.5 tsp

Cooking

In warm water dissolve brown sugar and salt. Add the egg

Then the melted butter

Sift cocoa

Entered soda, vanilla and sifted flour.

The finished dough spread on the molds. I have a paper. Bake in a hot oven for 20 minutes at t-180*. When ready to cool.

While cupcakes bake, make ganache. Saucepan with cream, put on fire, bring to a boil, add the broken into pieces of chocolate (I have milk). Proverjaem until then, until the mixture becomes glossy and homogeneous (literally 2-3 minutes). The ganache should be cool.

Make the meringue for the tops. Whisk cooled egg whites with sugar (on steam bath) - for about 10-15 minutes until stable peaks

Pastry bag or syringe, make a meringue cap. Cupcakes are ready! Bon appetit!
